Around the time I was born, Momma Chiu was a star pupil of Fu Pei Mei's cooking classes in Taipei, covering everything from the basics to banquet preparation.


 
 

  (Fu Pei Mei is one of the most renowned cooks in Taiwan.) She even considered becoming Fu Pei Mei's assistant at one time, using her English skills to teach a class of international students in Taipei, but luckily, her plans involved moving us to the United States.

The most common concern we get at our demos is "I want to eat more tofu, but I just don't know how to prepare it." Now's your chance to learn some easy ways to cook with soy at home. Each month, we'll post a new recipe for your enjoyment. If you'd like to reprint/re-post our recipes anywhere else, please write me and I'll ask Momma first.   LATEST RECIPE : Momma Chiu's Classic Browned Tofu

Browned Tofu
 

Instructions:

1) Heat 1 tbsp oil in a pan or wok.

2) Add tofu slices and brown both sides on medium high heat.

3) Remove the browned tofu and add ginger slices (add 1/2 tbsp more oil if necessary)… once the ginger is brown, add the green onions… add any optional vegetables at this point, and sautee for a few minutes.

4) Re-add the browned tofu.

5) Add 1.5 tbsp soy sauce and change to medium heat… if you’d like to kick this recipe up a few heat notches, add the optional spices now.

6) Add sugar to taste, to balance out the soy sauce, and mix properly for 2 min.

7) Add a few drops of sesame oil at the very end and serve with steamed or fried rice.

My mom cooked this recipe for my brother and I when she needed something quick and easy once we got home from school. A few years later, I took this recipe with me to college when I needed a taste of home. Feel free to add mushrooms or snow peas. This could easily become a classic tofu recipe in your home as well.

Browned Tofu

(serves 4)
Total time – 10 minutes


Prepare the following
Ingredients:

• 4 Green onions (chopped into 1" stalks)
• 4-5 pc Ginger (sliced thin)
• 1 package Banyan Foods Medium Hard or Hard Tofu (sliced 1/4" thick)
• 1.5 tbsp Oil (any)
• 1 tbsp Soy Sauce
• Sesame Oil
• Favorite vegetables (optional)
• Sugar (optional)
• Spices (optional)
