Dear John/Jane customer,

In Japan, where tofu consumption is among the highest in the world, tofu is discarded after a day or two on the shelf. Thatís the epitome of freshness. (Trying to find seafood that isnít fresh over there is like trying to... well if you ask me, it's a dumb thing to do in the first place.)

In the states, tofu is known to sit for 90 days on the shelf, up to ten months, if hermetically sealed, window-less packages are involved.

But if you had a choice between eating dried fruit or juicy, fresh fruit, which would you choose? If you could choose between living in a sun-less, fortified concrete bunker (that's how I think of window-less packages of tofu) or in a thatched hut on a tropical island, sipping drinks named after violent storms or geological catastrophes (sipping drinks in a hut is the metaphorical equivalent of our tofu, not the storms)... your choice would be...?

There are a lot of wonderful things you can do with technology. My favorites include orange creamsicles, the eradication of smallpox, and robots that love humans.

But fresh tofu should just stay fresh. Mummify fruit if you really need the texture of beef jerky in your fruit... buy window-less tofu when re-stocking your concrete bunker... but buy fresh tofu when you need it. Like you, our tofu probably wonít survive a nuclear winter. But some things werenít meant to last very long... iridescent sunsets, one-minute roller coaster rides, or the innocence of childhood. Would you have it any other way?
